When you buy livestock, the price is based on the live weight. After slaughter and processing, weight is reduced due to the removal of blood, bones, organs, hide, and moisture. Here’s a general breakdown:

  • Live weight (100%) → Carcass weight (~50-60%)
  • Carcass weight → Final meat (~70-80%) depending on cuts and trims.
  • Final weight depends on whether you choose bone-in or boneless cuts.
